Mates Munchies!

Ever had friends ‘invite’ themselves round for drinks only to look in the fridge to find only a week old slab of ham and mushroom pizza to go with them! Well these quick and easy recipes could get you out of a pickle AND won’t burn a hole in your pocket.


CHEESY SOUFFLÉ BITES

Half a loaf of stale bread cut into cubes (if you don’t have any stale bread throw some fresh into the oven for about 6 mins)
75g Cream cheese (any old one will do!)
150g butter (super market own cheap brand is fine)
150g cheddar
2 large egg whites (beat these till very firm...until you can tip the bowl upside down without them falling out...might be best to try this before you’ve had a drink!)
Pinch of salt
Lots of black pepper

Chuck the cheeses and butter in a pan over a low heat until melted...don’t worry if they look a bit manky! And the salt and pepper, then fold in the egg whites...then all you need to do it dip the bread cubes in the mixture and put on a greased baking tray...bake for around 10 mins until golden. Alternatively after dipping them bung them in the freezer for when you need them, will just take a bit longer in the oven.

P.S Try experimenting with flavoured soft cheeses


This is amazing and simple and goes with pretty much anything. If you have some left over, spread it over toast and grill.


SWISS CHEESE DIP

Half a red onion (sliced very finely)
Grated Swiss cheese or cheddar (or whatever you have in the fridge, just don’t call it Swiss dip! Hehe!) Throw in as much as you like.
And a mixture of mayo and sour cream
A little salt and pepper

Throw in a bowl and mix together-couldn’t be simpler!


GARLIC BREAD FINGERS

You can buy a pack of pizza base mix for around 80p and all you do is mix a little water with it. All students should have some in the back of the cupboard!

All you need to do for this is make the pizza dough according to the instructions, squash into any baking tray, then add the garlic butter (or marg if that’s all you have!) make the butter using a couple of cloves of garlic (minced, chopped, grated-whatever is easiest ) and a few herbs you have lurking about. Always add salt and pepper. While the dough is rising prepare the butter and grate some cheese. When the oven is hot enough (the packet will tell you what temperature etc) smear the butter over the pizza dough, followed by the grated cheese. When cooked, cut into slices and serve with the dip.
